Hi Jessica, 20 years with IC here. I also am on a chemo drug for UC which exasperates my IC. Sex is my ONLY trigger. I have tried a million diets and it didn't make any difference. So yes, I feel your pain.

I hate to be one of those people who offers up their "cures" because we all know this disease is very individualistic and you just manage symptoms. But I get my bladder distended with a cystoscope every 4 or 5 months. After that time period, the pain comes back with a vengeance. My urologist told me that bladder distention works for many women with IC. (And with some women...it makes it worse.) She said my pelvic floor is too "tight" so I have to work on relaxing it in order to have sex. And this is TMI but...I can't have a partner whose um...big.

Anyway, I just thought I would throw that out there as a possibility if you have not tried it yet.

And yes, finding the right partner is key too. I swear some men make my IC worse. Sex is mostly in the brain.
